Cumin Grilled Sweet Potato

Serves 2 Preparation: 20 minutes Cooking: 30 minutes
2 sweet potatoes, about 350 g (111/2 oz) each, washed but not peeled |
Cut the sweet potatoes into strips about 3cm (1/4 inch) thick.
Mix together the olive oil, salt, cumin and lime juice to make a paste.
Brush the sweet potato strips on both sides with the cumin paste.
Lay the strips on a grill pan and place under a hot grill for about 5 minutes, then turn the strips and grill for a further 5 minutes, until the strips and slightly crisp and tender.
Serve the sweet potato with wedges of lime.
