Smoked Tofu Pate

Serves 4 – prep time 10 mins

250g Smoked tofu
Half Lemon – juice of
2 tablespoons Sunflower margarine
1 tsp Paprika
1 tsp Mustard
1 tsp Grated horseradish
2 tablespoons Soya Cream/yoghurt
1 table spoon pumpkin seed oil
2 table spoons cold pressed flaxseed/hemp seed oil

To Serve
Watercress
Parsley
Chives

To Garnish
Peppers - sliced
Mini Oat cakes

Method
Break up the smoked tofu into a container.

Squeeze in the juice of half a lemon, sunflower margarine, paprika and a heaped teaspoon of mustard and grated horseradish (to give it a little kick)

Add the soya cream or yoghurt to sweeten it up and the oils.

Blend it all together with a hand blender or a food processor until it becomes a nice and smooth creamy pate consistency.

To serve
Serve on a bed of watercress, with some parsley, chives and sliced peppers to garnish with some mini oat cakes on the side for dipping.
